Grape maturity and wine analysis are made in a laboratory in order to help us in our everyday decisions. A constant investment is allocated on the cellar high technology equipment in order to extract the best of our harvest.
But it is certainly, our seven generations knowledge which is our best tool. This knowledge and an innovating spirit crystallise the best expression of our vineyard.
In one hand, our traditional cuvee use high technology tools for a traditional way of vinification; in the other hand, we have created new method of vinification with ancestral tools for our prestige cuvee. (1° vinification of rosé in oak barrel in 1986)
